Chajá Cake

This Sunday I am bringing you something that feels like pure happiness on a plate. Chajá is a dreamy Uruguayan cake made with soft, airy sponge, juicy peaches and billowy whipped cream, plus little pops of sweet, crunchy meringue. It is light, it is luscious, and it is the kind of dessert that makes you close your eyes on the first bite.

Around my table, this is the dessert that makes people slow down and say, “Wow, this is amazing.” Whether you serve it to a crowd or tuck away a slice for yourself, it is worth making just for that joy.

Ingredients

To make this recipe, please assemble the following
ingredients and prepare each item as noted:

Ingredients:

For the Sponge Cake:

  • 4 large eggs

  • ¾ cup granulated sugar

  • ¾ cup all-purpose flour

  • ½ cup canned peach syrup

  • Store-bought meringues

For the Filling:

  • 1½ lb peach halves in syrup

  • 2 cups heavy cream (30% fat)

  • ½ cup icing sugar (sifted)

  • 1 (14 oz) can condensed milk

Equipment:

  • Stand mixer

  • Piping bag

  • Piping tips (round & star)

  • Round 8-inch cake mold

  • Pastry brush
