Garlicky Pork With Warm Butter Beans In Under 30 Minutes

Sometimes you have a big weekend and you need a Sunday dinner recipe that you can cook at weeknight speed. You just need something quick and delicious. That’s what our garlicky pork dish is all about.
I love how creamy butter beans pair with pork. And I love how simple it is to plate this dish and still have it look like a million bucks. It’s one of my go-tos. Happy Sunday!

Ingredients

To make this recipe, please assemble the following
ingredients and prepare each item as noted:
  • 4 tablespoons olive oil

  • 2 garlic cloves, crushed

  • 4 lean pork chops (or steaks), about 150 g (5 oz) each

  • salt and pepper

  • 2 tablespoons olive oil

  • 2 x 400 g (13 oz) cans butter beans, rinsed and drained

  • 12 cherry tomatoes, halved

  • 150 ml (¼ pint) chicken stock

  • juice of 2 lemons

  • 2 handfuls of parsley, chopped
