Steak Fajitas with Charred Avocados
Hey friends,
If you want a dinner that feels fun and full of flavor, fajita night is always the answer.
This version starts with a honey, cumin, chili, and garlic rub that transforms simple sliced steak into something deeply savory and just a little sweet. A hot cast iron pan gives you that irresistible sear and all the flavor that comes with it.
Then we level it up with charred avocados. You do not need a grill to get that smoky edge, your broiler is your best friend here. A touch of honey and a few minutes of high heat turn ripe avocados into creamy, caramelized perfection with those beautiful dark edges.
Pile everything into warm tortillas add add whatever toppings you love, and let everyone build their perfect bite. Easy enough for a weeknight, but exciting enough for Sunday.

Ingredients
To make this recipe, please assemble the following
ingredients and prepare each item as noted:
For the Rub:
2 tablespoons honey
1 teaspoon ground cumin
1/2 tablespoon chili powder
2 garlic cloves, minced
2 pounds skirt, hanger, or flank steak, trimmed and sliced 1/4-inch thick crosswise
Freshly ground black pepper, to taste
Avocado or other neutral oil, as needed
For the Fajitas:
1 large yellow or red onion, thinly sliced
3 bell peppers (red, green, yellow), thinly sliced
1 jalapeño, deseeded if desired, thinly sliced
12–16 corn or flour tortillas, warmed
Avocado or other neutral oil, as needed
Kosher salt, to taste
Freshly ground black pepper, to taste
For the Charred Avocados:
3 ripe avocados
2 teaspoons honey
For Serving (Optional):
Shredded lettuce
Pico de gallo or salsa
Low-fat sour cream
Shredded cheese
