Spinach and Artichoke Mac and Cheese

It starts with classic, creamy mac and cheese, then we fold in vegetables like spinach and artichokes that add flavor, texture, and nutrients. The result is a dish that still feels comforting and familiar, but more balanced and satisfying. It’s an easy way to kick off the year by feeling better about what’s on the table, without changing what your family already loves.

Ingredients

To make this recipe, please assemble the following
ingredients and prepare each item as noted:

For the Spinach Artichoke Mac and Cheese:

  • 12 oz macaroni or pasta of choice

  • 2 tbsp butter

  • 2 tbsp flour

  • 2 cups milk (whole milk works best)

  • 1 cup cream

  • 1 cup shredded mozzarella

  • ¼ cup shredded white cheddar

  • ¼ cup feta cheese, crumbled

  • ½ cup grated Parmesan

  • 2 cloves garlic, minced

  • 1 (14 oz) can artichoke hearts, drained and chopped

  • 4 cups fresh spinach, roughly chopped

  • ½ cup parsley, finely chopped

  • ¼ cup pickled jalapeños, finely chopped (adjust to taste)

  • ½ tsp ground mustard

  • Salt and pepper, to taste

For the Breadcrumb Topping:

  • 2 tbsp butter

  • ½ cup panko breadcrumbs

  • Pine nuts or slivered almonds, finely chopped

  • ¼ cup parsley, chopped

  • Salt and pepper to taste
