Snapper Avocado Ceviche
Hey friends,
If you're reading this before kickoff, happy World Cup Final day! Whether you're all in for the match or just showing up for the food, this is exactly what I'd have on the table.
I think ceviche deserves more love. It's bright, refreshing, surprisingly easy to make, and tastes like something you'd order at a great seafood spot. Plus, it's perfect for sharing, which makes it a great game-day dish.
One of the things I love most about this recipe is how flexible it is. Snapper is fantastic, but rockfish, grouper, or shrimp works just as well. And if you've been hesitant to try making ceviche, don't overthink it. The citrus gently cures the fish, giving it incredible flavor and texture without ever turning on the oven.
Honestly, that's why I come back to this recipe all summer long. Paired with crispy tostones, it's light, satisfying, and the kind of meal I crave when it's hot outside.

Ingredients
To make this recipe, please assemble the following
ingredients and prepare each item as noted:
For the Ceviche:
1 pound snapper filet, cut into ¼ inch pieces (grouper, rockfish or shrimp work well too)
1 red bell pepper, finely diced
1 jalapeno, finely diced (de-seeded if you don’t want heat)
½ small red onion, julienned
1-2 garlic cloves, minced
¾ cup fresh squeezed lime juice (from about 6 limes)
¼ cup fresh squeezed lemon juice (from 1-2 lemons)
1 large ripe avocado, cut into ¼ inch cubes
4 radishes, sliced thin
2 tablespoons freshly chopped cilantro (leaves and stems)
Pinch of ground cumin
Kosher salt, to taste
For the Tostones:
2 medium sized green (unripe) plantains
Neutral oil such as avocado, canola, or vegetable, for frying
Kosher salt, to taste
