Sunday Dinner
Simple Leek & Potato Soup
Happy New Year, friends!
If you’re anything like me, the holidays meant a lot of time in the kitchen. Big meals, big messes, and a lot of cooking for other people. So when the new year rolls around, I start craving something simpler. Something comforting, filling, and easy enough that it actually feels relaxing to make.
That’s where this Simple Leek and Potato Soup comes in. It’s made with just a handful of humble ingredients, all simmered together into something velvety, cozy, and deeply satisfying. No fancy techniques, no complicated steps, just good food that warms you up.
It’s perfect for a laid back Sunday dinner, and even better knowing you’ll have leftovers ready to go for the week ahead.
