Mediterranean Spinach & Feta Egg Bites

Hey friends,

Welcome to February! If New Year motivation is starting to fade, this recipe is here to help you settle into a feel-good rhythm.

The Mediterranean Spinach & Feta Egg Bites are fluffy, savory, and packed with protein. We originally developed this recipe last year as part of our partnership with the American Diabetes Association® (ADA), with a focus on balanced ingredients that support steady energy and blood sugar. They are perfect for busy mornings when you want something satisfying, portable, and easy to prep ahead.

Cooking this way is personal for me. A few years ago, after being diagnosed with pre-diabetes, I had to rethink my relationship with food and use being a chef to my advantage. It was intimidating at first, but it led me toward meals that feel joyful, balanced, and sustainable, especially for people managing diabetes.

That journey brought me to my partnership with the ADA, where we create diabetes-friendly recipes and live cooking classes designed to meet people where they are. What truly sets these classes apart is that a registered dietitian nutritionist and certified diabetes care and education specialist joins each class to answer questions in real time, share practical guidance, and support confident diabetes management alongside the cooking.

We’re excited to keep this work going. Starting in March, all ADA live and past classes will move to the ADA’s YouTube channel. You’ll still register at homemadecooking.com, and the next live class is on March 12 at 4 PM PT / 7 PM ET. Past classes will also be in a dedicated playlist, making it easier than ever to cook along from anywhere.

To make this recipe, please assemble the following
ingredients and prepare each item as noted:

For the Mediterranean Spinach & Feta Egg Bites:

  • 1 tsp olive oil

  • 1 bag (8 oz) fresh spinach, chopped

  • 7 large eggs

  • 1⁄2 cup skim milk

  • 1⁄8 tsp black pepper

  • 1 medium tomato, seeded and finely diced (about 4 oz)

  • 1⁄2 cup crumbled fat-free feta cheese (2 oz)

  • 1⁄2 tsp dried oregano
