This Sunday we’re cooking up a dish that’s fast, flavorful, and just a little unexpected.
Pad Thai is one of those meals that checks every box. It’s salty, sweet, tangy, and by swapping in thinly sliced lamb shoulder, we’re adding richness and depth that takes this weeknight classic to the next level. The lamb marinates in garlic, soy, lime, and fish sauce before hitting the pan, so every bite is packed with flavor. Toss it together with rice noodles, tamarind sauce, and all the fresh toppings like bean sprouts, carrots, cilantro, peanuts, and you’ve got a complete meal in under 40 minutes.

For the Lamb Shoulder:
1 lb lamb shoulder, thinly sliced
2 cloves garlic, minced
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp brown sugar
1 tbsp lime juice
1 tbsp vegetable oil
For the Pad Thai:
8 oz rice noodles
2 eggs, lightly beaten
1 cup bean sprouts
½ cup shredded carrots
¼ cup chopped green onions
¼ cup chopped cilantro
¼ cup crushed peanuts
2 tbsp vegetable oil
For the Pad Thai Sauce:
3 tbsp fish sauce
3 tbsp tamarind paste (not concentrate)
2 tbsp soy sauce
3 tbsp brown sugar
1 tbsp lime juice
1 tbsp rice vinegar
1–2 tsp chili paste or sriracha (optional)
