Joel’s Ultimate Thanksgiving Turkey
We’re officially in the home stretch before the big Thanksgiving feast, and my kitchen is already buzzing. I’ve been doing my usual pre-holiday ritual: starting the shopping early, cooking through every odd container in the fridge to make space for the real leftovers, and letting the turkey take its journey from freezer to readiness. But if your week has been wild or you haven’t grabbed a turkey yet, don’t stress. I’ve got you covered with the simplest, most foolproof turkey recipe I know.
Every year, without fail, I make the exact same Thanksgiving turkey. This dish has become our tradition and what everyone looks forward to. It’s buttery and crisp on the outside, tender on the inside, and scented with fragrant tarragon, bright oranges, and those warm, cozy spices that make the whole house smell like the holidays.

2 large oranges, quartered
4–5 star anise pods
12 tbsp (1 1/2 sticks) unsalted butter, melted
1 tbsp salt
1 tbsp black pepper
1 handful fresh tarragon sprigs
1 cup chicken or turkey broth
