Grilled Oysters

Hey friends,

Labor Day weekend calls for something a little festive, and nothing feels more celebratory to me than oysters on the grill. They’re quick, indulgent, and with a little chili garlic butter, they’re irresistible.

If you’ve never grilled oysters before, don’t worry. Once they’re shucked, all you need is a spoonful of smoky, garlicky butter and a few minutes on high heat. The shells become little flavor vessels, infusing the oysters with that rich, spicy butter. Add a squeeze of lemon and a hunk of crusty bread, and round it out with a bright Simple Caesar Salad for a meal that’s equal parts fresh and indulgent.

To make this recipe, please assemble the following
ingredients and prepare each item as noted:

Ingredients:

For the Chili Garlic Butter:

  • ½ cup (1 stick) unsalted butter, softened

  • 1 small garlic clove, finely grated

  • ¼ teaspoon chili flakes

  • 1 teaspoon smoked paprika (optional, but adds depth)

  • Zest of ½ lemon

  • Pinch of salt

For the Oysters:

  • 12 fresh oysters, scrubbed clean

  • Lemon wedges, to serve
