Cider Pork Chops & White Beans

Hey friends,

This week I’m bringing you one of my favorite dishes, cider-glazed pork chops with garlicky white beans, crispy chorizo, and kale that actually makes you want to eat your greens. It’s sweet, smoky, done in one pan, and on the table in 30 minutes. My kind of meal.

To make this recipe, please assemble the following
ingredients and prepare each item as noted:

Ingredients:

  • 4 bone-in pork chops

  • 2 tablespoons olive oil

  • Salt and black pepper, to taste

  • 1 cup apple cider

  • 2 tablespoons maple syrup

  • 1 tablespoon Dijon mustard

  • 1 tablespoon apple cider vinegar

  • 1 cup cooked white beans or canned

  • 4 ounces chorizo, sliced

  • 2 cups kale, chopped

  • 2 cloves garlic, minced

  • Red pepper flakes, for garnish (optional)

Spring Pesto-Stuffed Leg of Lamb (~50min)
This is springtime wrapped in a roast—buttery lamb stuffed with a bright, nutty, salty-sweet pesto made from pistachios, peas, and feta. The lamb gets rolled up, tied, roasted to perfection, and sliced into beautiful spirals of tender meat and herby goodness. Chef instructor: Joel
